Coconut Rice (Khao Man)

2 cups Jasmine rice

500ml water

500ml coconut milk

salt, to taste

1/2 tbsp sugar

Method :

Wash the rice in cold water, then set aside to drain. In a large pan, combine the rice, water, coconut milk, salt and sugar. Bring to a fast boil, stirring occasionally. Reduce the heat and cover. Cook for 15-18 minutes, until done. Remove from the heat, take off the lid and fluff the rice with a roasting fork, taking care not to mash the grains. Serve hot.

Rice in some form or other always forms a significant part of a Southeast Asian meal. Not only is it very versatile, but it is also a good filler. Here, coconut supplements the cooking water.
