Prawns with Basil and Rice

Ingredients :


2 tbsp oil

1 egg, lightly beaten

1 onion, chopped

2 cloves garlic, crushed

2 tsp shrimp paste

1 large tomato, chopped

2 spring onions, sliced

2 tbsp oyster sauce

5 cups cooked long grain rice

375g cooked school shrimp, peeled

Method :

Heat 1 tbsp of the oil in a large frying pan. Add beaten egg and cook 1-2 minutes each side, remove from pan and cut into thin strips. Heat remaining oil in pan, add onion and garlic and fry for 2 minutes. Stir in shrimp paste, mixing well. Add all remaining ingredients and cook for 2-3 minutes, stirring occasionally. Serve topped with sliced egg.

Serves 4-6
