Thai Fried Rice

Ingredients :


2 tbsp oil

4 cloves garlic, chopped

400g lean pork, chopped

2 red capsicum, chopped

4 spring onions, chopped

4 tbsp tomato sauce

4 tbsp fish sauce

375g cooked school shrimp, shelled

8 cups cooked long grain rice

2 eggs, lightly beaten

Method :

Heat oil in a large frying pan. Add garlic and pork and fry until pork is golden brown. Add capsicum, spring onions, fish sauce, tomato sauce, prawns and rice, cook over a moderate heat for 3 minutes. Stir in beaten eggs and mix through. Cover with a lid and cook for 2-3 minutes, stirring once or twice.

Serves 8
